Mixed dough, night before.
Let it autolise all night.
Kneaded it the next morning at 9am ish.
Left to rise all day until 4pm ish.
Folded n pushed air bubbles out, light covering of olive oil – tray coated with olive oil.
Folded finely chopped rosemary through the dough.
Ingredients left at room temperature all day – pickled anyway.. I want them warm
Dough pushed into tray, oven heating up.
Gas mark 6
Pushed filling into dough before it’s risen (otherwise you break the structure and damage the rise, if you do it last).
Covered in cling film, left to at least double in size.
Baked in the middle of the oven for 15 minutes, then turned for another 15.
Removed from tray, then baked for 7 minutes on the rack.
Left to cool on a wire rack, covered with a clean tea towel.
It smells lush as it’s baking.
